Wild Mushroom Stroganoff - Serves 4 (v,gf)
We're celebrating the season of wild mushrooms by treating you to our new Stroganoff recipe. This hearty dish brings welcome comfort to shorter days and cooler nights and is best served with cosy company and a big glass of Pinot Grigio.

Ingredients
100ml dry white wine
1 onion, sliced
1 clove garlic, minced
500g fresh wild mushrooms
1 Tsp smoked paprika
1 Tbsp Dijon mustard
400ml soya cream
30g tarragon, finely chopped
20g dill, finely chopped
20g cornichon, sliced
salt & pepper to taste
Preparation
Heat the wine, onion and garlic in a saucepan over medium heat until the onion begins to soften, about 5 minutes.
Add the mushrooms and continue to cook for 2 minutes.
Add the paprika, cornichon and mustard and stir well. Now add the cream and herbs, stirring constantly, until the mixture thickens (approximately 5 minutes).
Add salt and pepper and heat thoroughly.
Works beautifully with pasta, rice or baked potatoes.
